Ingredients

  • 200g butter, softened

  • 50g icing sugar

  • 1/2 tsp salt

  • 200g plain flour

  • 30g cornflour

  • 1tbsp milk (optional)

Directions

  • Preheat the oven to 170ºC fan (375ºF/gas 5). Line
two baking trays with baking paper.
  • Cream the butter until light and fluffy. Add the
icing sugar and salt, and beat on high speed until
    combined.
  • Add in all the remaining biscuit ingredients excluding the milk and mix
with an electric whisk until combined into a soft
dough. If the dough is very stiff, add in the milk to make it easier to work with. It should be soft but not overly sticky.
  • Scrape out portions of the dough using a tablespoon
measure and roll into a ball in the palm of your
hands. Place the balls well spread out on the baking
trays. You should get about 20 from this mixture.
  • Press gently on the top of the balls of dough to give them a flat top. Use a dinosaur footprint cutter, or the foot of a very well cleaned dinosaur action figure to press a footprint into the centre of each cookie. If the cookie is getting stuck to your cutter, dip the cutter or foot in some water before pressing into each cookie.
  • Bake the biscuits for about 15 minutes, or until they are
picking up a light golden colour around the edges.
Leave to cool on the tray. They will be very soft out
of the oven but will firm up as they cool.
